The Story
For bottle 3, we land in Hungary, on the volcanic slopes of Mount Saint George. Here, former DJ Áron and his partner Karina run the tiny, biodynamic estate PAP Wines. This is exactly the wine we had in mind when we conceptualized the "King's Day Glou-Glou" category. The name really says it all: Don't Tell Mama is an incredibly playful, mischievous wine. While we kept the skin contact very light in the previous bottles, this blend of local Hungarian grapes was macerated on the skins for about ten days before aging in oak barrels. It forms the perfect bridge in our box: the wine has noticeably more color and structure than the first two bottles, yet retains an insane, chuggable energy.
The Vibe & Tasting Notes
Thanks to those ten days of skin contact, this wine boasts a beautiful orange glow and a fantastic, perfumed nose full of floral and fine, spicy notes. On the first sip, you immediately taste the influence of the basalt soil where the vines grow: a tight minerality that pairs beautifully with juicy fruit, an elegant hint of oak, and a very light, pleasant bitterness on the long finish (the 'bite' from the skins). It is lively, unfiltered, and bursting with character. It is the absolute ultimate 'park wine'—pop this open slightly chilled in the sun, share it with friends (and just don't tell your mom).

Growers who refuse pesticides and chemical additives accept that they’ll lose a significant part of their harvest to weather, disease, and unpredictable nature, but they do it to keep their wines pure, alive, and honest.

Nature swings between plenty and scarcity; frost, hail, heat and ferments can erase volumes, fewer bottles must carry the farm’s costs, with ageing measures adding expense to keep the wine clean and true over time.

Integrity and handwork
Hands replace chemicals: they weed, manage canopies, pick, and sort by hand; presses and gravity moves protect texture, while cleanliness and patient ageing deliver purity without shortcuts, increasing labor but preserving integrity in every bottle.
