The Wine & Winemaker
- Winemaker: Sergi (Ca Foracaime)
- Region: Pinell de Brai, Catalonia, Spain
- Grape: Parellada, Macabeu, Garnacha and Moscat
The Story
We are opening this summer box with an absolute banger from Sergi. For him, a great wine always starts with a living, healthy soil. He works completely according to the principles of regenerative agriculture. When the earth is alive, the vines naturally get exactly the nutrients they need. The result is grapes of the absolute highest quality, packed with flavor and complexity. Sergi firmly believes that you make wine in the vineyard and not in the cellar. Healthy soil, healthy plants, healthy grapes, and therefore healthy wine. You can instantly taste that pure philosophy in this sparkling Waterfly.
The Vibe & Tasting Notes
This pet nat is the ultimate summer aperitif. Its unique character comes from a fascinating process: the Macabeu and Garnacha grapes first get a week of skin contact to macerate. Then, Sergi adds directly pressed Parellada right at the exact moment the wine goes into the bottle. This creates that wonderful, natural bubble. The addition of Moscat gives the wine a beautiful floral and aromatic perfume. Expect an explosion of juicy fruit, refreshing acidity, and a joyful energy that is absolutely perfect for a warm, balmy afternoon in the sun.

Why natural wine costs more, and why it’s worth it
-
No shortcuts
Growers who refuse pesticides and chemical additives accept that they’ll lose a significant part of their harvest to weather, disease, and unpredictable nature, but they do it to keep their wines pure, alive, and honest.
-
Risk and loss
Nature swings between plenty and scarcity; frost, hail, heat and ferments can erase volumes, fewer bottles must carry the farm’s costs, with ageing measures adding expense to keep the wine clean and true over time.
-
Integrity and handwork
Hands replace chemicals: they weed, manage canopies, pick, and sort by hand; presses and gravity moves protect texture, while cleanliness and patient ageing deliver purity without shortcuts, increasing labor but preserving integrity in every bottle.
