The Story
Giorgio Clai is globally revered as the godfather of Croatian natural wine. In the tiny village of Krasica, he crafts biodynamic wines that express the raw soul of Istrian terroir. With his Ottocento Pinot Sivi, he elevates Pinot Grigio to extraordinary heights. The skins of this grape are naturally pinkish purple rather than white. Through an intense spontaneous skin maceration in wooden casks, this process creates a striking Ramato style wine featuring a magnificent ruby pink to copper hue. Clai never intervenes chemically, refrains from filtering, and allows nature to follow its course completely.

The Vibe & Tasting Notes
This Pinot Sivi instantly mesmerizes in the glass with a unique, deep pinkish copper color. It offers a deeply layered and complex experience full of personality. On the nose, you will discover seductive aromas of ripe pomegranate, wild strawberries, candied orange peel, dried figs, and fragrant Mediterranean herbs like thyme and sage. On the palate, it exhibits impressive structure alongside a silky tactile grip and vibrant acidity. The salty mineral finish pays ultimate homage to the Istrian soil. A truly majestic bottle for natural wine purists.
