The Story
For the third bottle, we return to the sunny and volcanic shores of Lake Balaton with Áron and Karina. While we started the edition with their supple red wine, it is now time for the serious, wild stuff. With the Don't Tell Mama, they present an orange wine that breathes the absolute soul of the local terroir. They use the well known Olaszrizling, but blend it with Kéknyelű. This is an extremely rare Hungarian grape that is almost impossible to find anywhere else in the world. This wine is the ultimate embodiment of their philosophy: honest, untamed, and full of character.
The Vibe & Tasting Notes
Prepare yourself for a mysterious, highly textured experience. Because of the long skin contact and aging on the lees, this wine is an absolute flavor bomb. In your glass, you will discover rich layers of orange peel, wild herbs, a touch of smoke, and fresh rosemary. The volcanic basalt soil speaks loud and clear in the striking, slightly salty finish. This is an orange wine for the adventurous drinker looking for true complexity and depth.

Growers who refuse pesticides and chemical additives accept that they’ll lose a significant part of their harvest to weather, disease, and unpredictable nature, but they do it to keep their wines pure, alive, and honest.

Nature swings between plenty and scarcity; frost, hail, heat and ferments can erase volumes, fewer bottles must carry the farm’s costs, with ageing measures adding expense to keep the wine clean and true over time.

Hands replace chemicals: they weed, manage canopies, pick, and sort by hand; presses and gravity moves protect texture, while cleanliness and patient ageing deliver purity without shortcuts, increasing labor but preserving integrity in every bottle.
