The Story
We are kicking off the Hungarian edition with the raw energy of PAP Wines. This is the project of Áron and Karina, a passionate couple working the rugged, volcanic slopes around Lake Balaton. They do literally everything themselves here: from working the vineyards and the cellar to designing the labels and running a tiny vegan kitchen in the summer. Their wines are made in minuscule quantities and always feel a bit wild, in the best possible way. With this Rabbit's Foot, they capture the basalt soils, the wind, and the heat of the region in a bottle, rather than trying to control nature.
The Vibe & Tasting Notes
The Rabbit's Foot is a unique, boundary pushing red blend spanning two different vintages and three completely different grapes: Zweigelt, Cabernet Franc, and the white Pinot Gris. It might sound like an unusual combination on paper, but in the glass, it works beautifully. You immediately taste the lively energy with notes of red berries and ripe cherries. Thanks to the barrel aging, the wine also gains a wonderfully soft texture and a subtle spiciness. An incredibly surprising and accessible introduction to these volcanic heroes.

Growers who refuse pesticides and chemical additives accept that they’ll lose a significant part of their harvest to weather, disease, and unpredictable nature, but they do it to keep their wines pure, alive, and honest.

Risk and loss
Nature swings between plenty and scarcity; frost, hail, heat and ferments can erase volumes, fewer bottles must carry the farm’s costs, with ageing measures adding expense to keep the wine clean and true over time.

Integrity and handwork
Hands replace chemicals: they weed, manage canopies, pick, and sort by hand; presses and gravity moves protect texture, while cleanliness and patient ageing deliver purity without shortcuts, increasing labor but preserving integrity in every bottle.
