The Story
If there is one grape that captures the true Burgundian soul of Sutor, it is Chardonnay. On the steep slopes of Podraga, Mitja Lavrenčič and his family craft a white wine frequently compared to the legendary classics of Meursault. Mitja applies his uncompromising estate philosophy to this bottling as well. A small early harvest starter batch initiates spontaneous natural fermentation, after which the wine ages for a full year in Slavonian oak casks with frequent lees stirring. Bottled unfiltered and unfined, this bottle possesses the extraordinary ability to evolve majestically for decades.

The Chardonnay 2022 is a grand masterpiece of liquid elegance and depth. In the glass, it shines with a brilliant golden hue. You are greeted by rich aromas of candied lemon, ripe orchard fruit, toasted hazelnuts, a subtle touch of smoke, and warm brioche. The palate feels rich, silky, and impressively layered, yet retains a sharp mineral drive and salty freshness thanks to the fierce Burja wind sweeping through the valley. A royal, opulent white wine meant for special dinners alongside rich seafood, roasted poultry, or aged hard cheeses.

Nature swings between plenty and scarcity; frost, hail, heat and ferments can erase volumes, fewer bottles must carry the farm’s costs, with ageing measures adding expense to keep the wine clean and true over time.

Hands replace chemicals: they weed, manage canopies, pick, and sort by hand; presses and gravity moves protect texture, while cleanliness and patient ageing deliver purity without shortcuts, increasing labor but preserving integrity in every bottle.
