The Story
Mitja Lavrenčič approaches Sauvignon Blanc in a way that completely redefines the variety. Forget the crisp, grassy green commercial style most people expect. At Sutor on the steep slopes of Podraga, this famous grape receives a rich Burgundian treatment. Mitja and his family use their signature early harvest starter batch to initiate spontaneous fermentation, after which the juice ages for a year in Slavonian oak casks. Through regular batonnage on the lees, Mitja builds extraordinary texture. Unfined and unfiltered, this wine is built for deep bottle maturation rather than quick consumption.

The Sauvignon Blanc 2021 is a deeply complex and layered white wine that rewrites everything you know about this grape. In the glass, it reveals a golden hue with alluring aromas of ripe stone fruit, candied citrus, elderflower, sage, and a subtle, creamy touch of oak. The palate feels rich and structured, yet the extreme climate and fierce Burja wind of the Vipava Valley ensure a striking mineral freshness and lingering finish.
